Happy New Year! I just looked at the nifty little report WordPress provided as far as my readership in 2012 and I have to say – THANK YOU! It’s awesome to share my adventures with you guys. I hope 2013 is even better.
Mondays are healthy recipe days, and what’s New Year’s Eve without a little champagne? Drinking it straight is a fairly low-calorie option (just make sure you don’t overdo it!), especially as compared with say, a Malibu & Coke.
But, if you’re hosting a party or you’re in the mood for a something a bit fancy, may I suggest Cooking Light’s Champagne Limoncello Cocktail? It’s light, refreshing, a little different, and the presentation is gorgeous. Enjoy!
CHAMPAGNE LIMONCELLO COCKTAILS
(Serves 8)
Ingredients
8 (3 x 1/2-inch) lemon rind strips
8 tablespoons Limoncello (lemon-flavored liqueur)
4 teaspoons fresh lemon juice
1 (750-milliliter) bottle brut Champagne, chilled
Preparation
1. Roll up each strip of lemon rind; place 1 into each of 8 Champagne flutes. Add 1 tablespoon liqueur and 1/2 teaspoon juice to each glass. Divide Champagne evenly among glasses. Serve immediately.
